NPA Bakery

Ambition, Confidence, Happiness and Respect.

 

Outline - The course covers four units of work

Craft Baking including some of the following - powdered goods - scones and pancakes, yeast goods - rolls & pizza, cakes - cupcakes and Victoria sandwich, puff pastry - sausage rolls & apple turnover & simple pastry - apple pie & biscuits.

Bread Making - make loaves, bloomers & speciality breads - baguettes, ciabatta & focaccia.

Cake Decoration - produce a variety of shaped cakes with different coatings e.g. butter cream, chocolate ganache & fondant icing, using decorative techniques such as piping, modelling, and embossing.

Pastry - make four hot and four cold pastry products by using a variety of pastries - sweet, puff & choux.

Develops practical bakery skills in craft baking, bread making, cake decoration & pastry making.

The NPA is designed to equip candidates with the skills required for success in the bakery industry or for progression to further academic qualifications.

This course helps to build the practical skills required for N5 practical cookery & N5 practical cake course.

Assessment

  • All assessment is through practical activities supported by observation checklists.
