Outline - The course covers four units of work
Craft Baking including some of the following - powdered goods - scones and pancakes, yeast goods - rolls & pizza, cakes - cupcakes and Victoria sandwich, puff pastry - sausage rolls & apple turnover & simple pastry - apple pie & biscuits.
Bread Making - make loaves, bloomers & speciality breads - baguettes, ciabatta & focaccia.
Cake Decoration - produce a variety of shaped cakes with different coatings e.g. butter cream, chocolate ganache & fondant icing, using decorative techniques such as piping, modelling, and embossing.
Pastry - make four hot and four cold pastry products by using a variety of pastries - sweet, puff & choux.

Assessment
